Paleo Challenge Recap Week 2

We’ve had 6 events over the last 8 days between Oklahoma and New Mexico. I’m sure you can understand it’s been a long, busy week full of lots of early mornings, late nights and many hours spent driving. There are stories to tell, recaps to share and many photos to post but we’ll share those as we’re able to play catch up this coming week.


Anyway, busy weeks call for a lot of preparation and clean, nutritious food to keep you full and fueled. Thank goodness for our Paleo Challenge! Let’s take a look at a few of our meals this week!


1 – My favorite of 3 over-easy eggs with pan cooked plantains in coconut oil and a side of coffee. There was a lot of coffee required this week. 😉

2 – Sam baked up a few sweet potatoes for us to have on hand this week which was so helpful! She topped her sweet potato with coconut oil, sautéed kale and our favorite Manitoba Harvest Hemp Hearts. Plus a side of bacon. Yum!

3 – Sam doesn’t eat fish but I absolutely love it! We stocked up on salmon at Whole Foods this past week since it was on sale and I cooked up a big piece on the stove to last me a few meals. I shredded some of the leftovers and put it on a giant salad with balsamic vinegar and olive oil. Delicious!

4 – One of my favorite veggies and all the egg combinations in a LONG time…golden beets, Brussels sprouts, sundried tomatoes, fresh garlic and ginger and 3 scrambled eggs. Oh man, I need more!


Yesterday afternoon we were beat. Everyone kept telling us we needed to go to White Sands so after finishing our events at CrossFit Holloman, we drove a few miles down the road to enjoy the sunshine and beautiful sand and views before totally passing out for some much deserved and needed naps. I woke up just in time for Sam to ask if we should stay to watch the sunset (yes, please!) so we made nutrient rich smoothies for dinner that we sipped while watching the sun go down.
