We can’t take credit for today’s recipe. Sam found it on She Cooks He Cleans and they were delicious! But before we get to our take on the pancakes, let’s back up a bit.
Our friend Tina flew out from New York to spend the weekend with us in the Denver/Boulder, CO area. We were so excited to have a visitor and get a little break from the non-stop work. We spent our Saturday night at Pinot’s Palette painting pictures over a glass of wine. We may not be artists but hopefully we can fool a few people into thinking otherwise.. 😉
Sunday morning we made our way to Boulder to check out the Celestial Seasonings Tea Tour and explore Pearl Street. We had so much fun and just loved our time in Boulder.
While we were sad to see Tina leave Monday afternoon, she got a peak inside our events as she got to spend part of the day with us at Lowry (recap coming tomorrow) and of course we had to make her breakfast before she left! Apparently Sam and were on the same wavelength because while I was in the process of telling Sam I really wanted pancakes for breakfast, she stuck her phone in my face and said “sound good?” Perfect.
We made a few tweaks to the original recipe, adding cinnamon and nutmeg, and cutting the honey in half. Sam cooked up a batch for Tina and I which we had with homemade nut butter, sliced strawberries and bananas, and then made another stack with Ethereal chocolate and sliced strawberries for herself. Craving fulfilled.
