Sam’s Favorite Chicken Salad {Recipe}

  • A large handful of shredded chicken (Sam recommends getting a whole organic rotisserie chicken from WholeFoods and pulling it right away to have on hand)
  • 1 whole avocado, diced
  • A sprinkle of sea salt
  • ¼ tsp dried dill
  • A few sprigs of fresh basil chopped or ¼ tsp dried basil
  • A sprinkle of dried cranberries
  • A drizzle of balsamic
  • A heavy drizzle of olive oil

 

Mash everything together making sure the seasonings are completely incorporated while leaving some chunks of avocado

Put the chicken salad on a bed of spinach and chopped cucumber

Sam also likes to add all sorts of random things…

  • Shredded carrots
  • Fresh or dried figs
  • Fresh peaches
  • Fresh berries: blueberries, raspberries, strawberries, blackberries
  • A sprinkle of Manitoba Harvest hemp hearts
